Dr. Amy just discovered this healthier version of a double chocolate chip cookie. They are amazing warm out of the oven. (Be sure to put some away for later!)
3/4 cup mashed avocado (takes about 1 1/2 avocadoes)
1/2 cup coconut sugar (Nature’s Marketplace in Wegmans has it)
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp vanilla
pinch of sea salt or Himalayan pink salt
1/2 cup dark chocolate chips (or chop up couple ounces of a 70-85% dark chocolate bar in chunks – that’s what Dr. Amy did)
1. Combine the avocado and sugar in a mixer. Add the egg and continue mixing.
2. Add all remaining ingredients.
3. Bake at 350 degrees F for 8-10 minutes on parchment paper. Makes 10-12 cookies.
