Pickling is all the rage right now. Make a batch of these easy and delicious pickled veggies and eat a few with lunch everyday in order to get more produce into your diet. Yummy! Or, set a plate of these out as a healthy appetizer.
Easy Pickled Vegetables:
1 cup vinegar (white or apple cider)
1 cup water
1 Tbl kosher salt
1 Tbl sugar
4 or 5 peppercorns
1 bay leaf
Pinch of red chile flake
1 clove of garlic, cut in half
1 small piece of fresh ginger
1 cup sliced red pepper
2-3 carrots, peeled and cut into slices
1 ½ cups chopped cauliflower
1. Combine first 9 ingredients in a saucepan and bring to a boil. This is your brine solution.
2. Place veggies in a large, heat-proof bowl and pour hot brine over them. Allow the veggies to marinate in the brine for at least two hours (until cooled down) yet in the refrigerator overnight is best.
3. Store your pickles in the refrigerator in a glass jar.
