Strawberry and Field Greens Salad
(serves 4-6) *The taste of Summer in a bowl
1 bag or box of 10 ounces prewashed mixed baby field greens (aka mesclun mix)
1 pint strawberries, washed and sliced
1/4 cup pecans (toasted and chopped – toast in oven 10 minutes at 350 degrees on cookie sheet)
1/4 cup crumbled blue cheese or feta cheese (optional)
1/2 small red onion, sliced
3 Tbl olive oil
2 Tbl Balsamic vinegar
Pinch of salt and pepper
1. Toss the greens with the olive oil, vinegar, salt, and pepper.
2. Place the dressed greens on a serving platter.
3. Arrange the berries, pecans, and crumbled blue cheese on top.
4. Serve with tongs.
