Homemade Granola: (makes a huge batch)
2 eggs
½ cup canola or grapeseed oil
½ cup brown sugar
1 Tbl cinnamon
1 tsp ground ginger
½ tsp nutmeg
½ tsp salt
6 cups rolled oats (not quick-cooking)
1-2 cups raw walnuts, almonds, cashews, hazelnuts, macadamias, and/or pecans
2 Tbl raw chia seeds
1/2 cup raw sunflower or pumpkin seeds and/or 1/4 cup raw flax seeds or sesame seeds
1 cup raisins (or any dried fruit)
1. Preheat oven to 300 F.
2. In a large bowl, whisk together eggs, oil, sugar, and spices. Add oats, nuts, and seeds (BUT NOT THE DRIED FRUIT) and mix thoroughly. Divide mixture between two cookie sheets.
3. Bake for 50 minutes, rotating the pans once. You are trying to dry the granola out without burning it. However, it might seem a little sticky when it’s still warm. Set one piece aside for a minute or two to cool down. If it seems crunchy, you’re done. If it is still sticky, bake another five minutes and repeat the test.
4. Once the granola is done, stir in the raisins or other dried fruit while the mixture is still warm. Allow to cool, and store in an airtight container.
