Curried Chicken Salad:
1 large chicken breast, poached or grilled and diced
1 medium apple, diced
2 Tbl dried currants or raisins
2 Tbl toasted walnuts or pecans, chopped
1 rib celery, diced
2 Tbl plain yogurt
½ tsp curry powder
Salt and pepper to taste
1.Combine all of the ingredients in a large bowl.
2.Serve alongside sliced fruit or on a bed of greens.
