Recipe: Peanut Butter Energy Balls

This is a great school day breakfast or after school snack. Each Peanut Butter Energy Ball is a perfect package of protein (peanut butter), plant-based fat (peanut butter), fiber (oats), produce (banana), and fun (chocolate on the outside).

Make a big batch and freeze them.  Take out two per person the night before and let them thaw in the fridge overnight.

Peanut Butter Energy Balls
(Makes about 10 balls – serving is 2 balls – serve with a beverage and maybe another serving of fruit such as sliced apples or pears)

1 cup oats
1 large, ripe banana
3/4 cup natural peanut butter
½ cup salted peanuts & ½ cup mini chocolate chips (for coating the balls)

1. In a food processor, chop the peanuts and chocolate chips together. Pour out the mixture into a small bowl and set aside.
2. Place the oats into the food processor (no need to clean it out again) and grind the oats until they are powdery. Add the banana and peanut butter and process again until well blended.
3. Place the food processor with the mixture into the freezer for about 15 minutes.
4. Form Tablespoon sized balls (they will be very sticky) and roll each ball in the chopped peanuts and chocolate mixture.  Freeze them on cookie sheets then store in airtight container in the freezer.
