Spicy Red Lentil Soup: (this recipe is gluten-free, high in protein, and low calorie!)
Serves 6
2 Tbl. extra virgin olive oil
2 cloves garlic, minced
1 small onion, diced
2 ribs of celery, diced
2 medium carrots, peeled and diced
2 Tbl chili powder
1 tsp ground cumin
1 tsp ground coriander
½ tsp chipotle powder
1 can diced tomatoes
1 Tbl. good quality curry powder
1 cup red lentils
5-6 cups water
Approx. 2 tsp. salt (more or less to taste)
Freshly ground black pepper to taste
- Saute the garlic, onion, celery, and carrot over medium heat until slightly softened and aromatic. Add the spices and cook briefly. Add the can of tomatoes.
- Stir in the lentils and add five cups of water. Cook over low heat until lentils are soft (about 45 minutes – you may need to add more water).
- Season the soup with salt and pepper.
