Spicy Red Lentil Soup

Spicy Red Lentil Soup: (this recipe is gluten-free, high in protein, and low calorie!)

Serves 6

2 Tbl. extra virgin olive oil

2 cloves garlic, minced

1 small onion, diced

2 ribs of celery, diced

2 medium carrots, peeled and diced

2 Tbl chili powder

1 tsp ground cumin

1 tsp ground coriander

½ tsp chipotle powder

1 can diced tomatoes

1 Tbl. good quality curry powder

1 cup red lentils

5-6 cups water

Approx. 2 tsp. salt (more or less to taste)

Freshly ground black pepper to taste

  1. Saute the garlic, onion, celery, and carrot over medium heat until slightly softened and aromatic. Add the spices and cook briefly.  Add the can of tomatoes.
  2. Stir in the lentils and add five cups of water.  Cook over low heat until lentils are soft (about 45 minutes – you may need to add more water).
  3. Season the soup with salt and pepper.
